Ca'della Scala of Italo Cescon, Valpolicella Ripasso Superiore D.O.C., “Mezzopiano”

“Ripasso” is an ancient technique known in Verona which consists of “repassing” Valpolicella on the pomace of the dried grapes used to produce Amarone and Recioto, creating a fine wine with greater body and character.
